Preparation Tips

  1. Preheat the oven to 350 F.
  2. Remove the outer membrane on the ribs by hand. Scrape a corner with your thumbnail to get it started and pull the rest free from the ribs.
  3. Pick your favorite seasoning, rub or marinade and apply liberally.
  4. Place prepared ribs in a shallow foil-lined baking pan, meaty side up, in the preheated oven. Roast about 1½-2 hours until tender and meat pulls away from the bones (approximately 195 F internal temperature).
  5. After roasting, place the ribs on the grill, meaty side up, directly over medium heat for 15-20 minutes. Turn the ribs frequently and brush with sauce as desired.

  • salt, to taste
  • pepper, to taste
  • 1 bottle of BBQ sauce

Steps

  1. Season ribs with salt and pepper.
  2. Place ribs on a medium-hot grill over indirect heat; close grill hood and grill until ribs are tender, about 1½ to 2 hours. (Add more charcoal briquettes to fire, if necessary, to maintain grill temperature of about 325-350 F.)
  3. Finish by turning and basting ribs with BBQ sauce for the last 15 minutes.
  4. Serve ribs directly from the grill or, for extra tender ribs, wrap in heavy aluminum foil. Place foil-wrapped ribs in brown paper bags, close bags and let ribs rest for up to an hour.
  5. Unwrap ribs, cut into pieces and serve with extra BBQ sauce.
