Ingredients
  • 1 Smithfield Slow Roasted Golden Rotisserie Flavor Fresh Pork Tenderloin
  • 2 tbsp olive oil, divided
  • 2 cups Yukon gold potatoes, chopped into 1-inch pieces
  • 1 cup baby carrots
  • 1 tsp garlic salt
  • 1 tsp parsley

Steps

  1. Preheat oven to 400 F. Heat 1 tbsp of olive oil in a cast iron skillet over medium-high heat and sear pork loin for 2-3 minutes per side.
