Meal Idea – One Pan Rotisserie Tenderloin with Veggies

Ingredients
- 1 Smithfield Slow Roasted Golden Rotisserie Flavor Fresh Pork Tenderloin
- 2 tbsp olive oil, divided
- 2 cups Yukon gold potatoes, chopped into 1-inch pieces
- 1 cup baby carrots
- 1 tsp garlic salt
- 1 tsp parsley
Steps
- Preheat oven to 400 F. Heat 1 tbsp of olive oil in a cast iron skillet over medium-high heat and sear pork loin for 2-3 minutes per side.
- Turn off heat and add potatoes and carrots. Drizzle remaining oil on top and add seasonings.
- Place the skillet in the oven and cook for 15 minutes until tenderloin reaches an internal temperature of 160 F.
- Remove the tenderloin from the skillet, cover with foil and set aside. Next, turn the oven temperature up to 425 F.
- Return the skillet to the oven and cook for 10-15 minutes until the potatoes and carrots are soft.
- Slice the pork and top with the cooked vegetables and serve while hot.
Storage Instructions
Keep pork tenderloin refrigerated or frozen to ensure freshness and preserve flavor. Packaged pork tenderloin can be kept in the refrigerator for 2-4 days or up to 6 months in the freezer.
